When it's cooked in foil it's called sur une feuille d'étain :) En Papillote means "On parchment". This, is on foil :) I maybe wrong though. the 17 years I lived in France may have fogged my memory :P
@SparksySTP Yes that means tin foil...but En Papillote is a cooking method, either used with parchment paper of foil which I explained in the video. thanks for your comment. :)
@SparksySTP thanks for your comment...but it is En Papillote which I clearly explained in the video. The parcel is typically made from folded parchment paper, but other material such as a paper bag or aluminium foil may be used..its the way its cooked, not about the ingredients.
Could I use another fish for this recipe in case I am not able to get fresh grouper. We love to eat grouper when we vacation in Florida.
