Over the past few years I began to notice peculiar symptoms. For one, I felt tingling on the skin at random spots on my body. It felt about the way it feels if a fly lands on me. I had digestive problems. I had sinus problems. Then I began to notice extreme muscle stiffness. Extreme. On a hunch, I stopped gluten for a week. I was cured completely. No lie.
I am thinking of leaving gluten completely. I have autoimmune thyroid disease and lots of bowel problems, and the medication those lousy doctors gave me doesn't work. Now I have narrowed it down to Celiac
If I give it up, what foods can I replace it with? My entire diet is basically Gluten. Will I have to just eat raw vegetables or what? (This is a serious question. I honestly don't know what else I could eat...)

It is hard to completely get it out of one's regular habits as basicly everything that tastes good has gluten in it [not really, just the bready stuff]. But its the hidden gluten that is tough. Its in the places you wouldn't think of, but they affect the system. I am glad this is getting more coverage.
BULLSHIT! Every decade there is something these health experts want us to avoid or "beware" of. Remember 10 years ago when carb free was the way to be? Who cares now? Nobody, early 90's high fiber was the rage and now all of a sudden BAM,so much effort is going into being gluten free and consuming acai berries. Talk about a real intolerance like lactose intolerance or crustaceans. Eat your daily bread CHRISTIANS.
@sadetwizelve Excuse me, but the real point about gluten is that it's a chemical compound that is being altered by mass production, chemical pesticides being sprayed on the crops to produce the food that we are eating. Whatever happened to eating real food? Why must we eat things like "oatmeal squares" instead of baking an oatmeal crisp, or even a bowl of oatmeal? It's seriously a problem related to our food production that's eradicating the need to prepare our own food and we're paying for it.
@kaileikehe I agree. I find it so hard to find natural 'clean' food these days and ever since trying to eat more healthy i realise there is so much chemicals in the everyday food we eat. Even when reading the ingredients, a lot of the things have been processed while in it's natural form that are not stated. It is expensive to only purchase organic products and not everything is available that way. I hope more organic companies start up in the future to lower costs.

You're right,I have lactose intolerance and appreciate dairy products labeled "lactose free". It doesn't affect everybody but it's conveniant for the people who are. I'm very sorry.@t07061988
@jklfds85 They can if they are processed in machines that process other products that contain gluten. Otherwise they are gluten free. An easy way to be sure is to but nuts in the shell like pistachios, peanuts and walnuts. Nuts in the shell stay fresh longer and taste better. Old nuts are bad for you because the oil is rancid.
That was very informative. If Gluten is so bad for us then why doesn't the FDA or W.H.O. step in and ban it to protect our health like they did monosodium glutamate?

So many people these days have multiple sensitivities, from Gluten to Food Colors, different Preservatives, Dairy, MSG....the list goes on & on including GMO Corn, and other crops, not to mention pesticide & chemical residues.
Basic meal info like on your site is good, but many people need some type of non-toxic Gluten Free, snack food(s) w/out Fructose or Sucrose...Now That Would Be A VERY Useful Video.
