My guess is that they copied the song so closely, they figured they mightaswell pay the licensing fee for the song, since they'd probably get sued for riffing on it. Whatever the actual cue name is, it isn't on the soundtrack CD.

I think it is from Booker T. & The MG's "Can't Be Still". The Get Shorty soundtrack is available at Amazon, and the sample they offer there for free, while not exactly the music in the clip, is very close. "Stink" from John Lurie starts somewhat later.
Can't quite put my finger on it... Sounds kinda like "Bo at the Airport" but these are the wrong characters I think. You can't go wrong just getting the whole sound track though, it's great!
Get Shorty is full of great music - I love this movie!

The soundtrack is great, it does have Green Onions on it, but there's a lot of original stuff by John Lurie. Worth tracking down.

I think the music is just original score by John Lurie. In any case, it's certainly NOT Booker T & the MGs' "Green Onions".
