I don't think they've ever told us.
The only organized crime that has ever been discussed by Sonny is loan sharking, horse racing, union manipulation, and stuff like that. The mysterious shipping industry has never been revealed.

Most likely it's weapons or something else. Jason and Sonny have killed people for moving drugs in their territory so i know it is not drugs.
