I can explain all of these animation errors for story purposes, where they use magic for every day occurrences this angered the Dread Dormammu, and he saw fit to mess with reality thus causing their lives to mess up for all time. I don't really see the last AJ hat as an error, she is leaving the place so it's natural that she must have placed her hat somewhere and put it back on as she was taking off, she wouldn't want to leave her precious hat behind, and she took off her hat in the first place to be courteous. The other times when she puts it back on randomly I agree is an error.

while most of these are good finds the one involving applejack leaving while balancing a bunch of food on her head can't really be considered an animation error. Just cause she was shown first not wearing her hat at the beginning of the episodes doesn't mean she didn't bring it with her. She could have easily put it on before grabbing the food and leaving.
