Does anyone know what kind of oven trays he uses? In all his programmes, he seems to remove the tray from the oven using his bare hands. Are they special trays? or is he just double 'ard? (or maybe the oven isn't actually on when they record and things are precooked?)
@Will137 he can take out the tray since its only 60 degree, if you're a chef you are used 2 put your on hands on things at 80 degree and over, so 60 is nothing 2 take out with the bare hands.
and very occasionally you put ur hands on things that are 270 degrees and drop the pan on the floor and swear very loudly and kick the oven door shut (like i did last saturday night!)
i have to say, i have worked in great kitchens all my (Pro) life, and i love this man for... the way he seems to care about food on a science style level, but what the fuck is up with his ears lol, they scare me!

The reason you can't leave the skin on is because it gains no structure during cooking therefore you will get no traditional roast potatoe structure
