This is a 28 inch mirror tray (yes, the tray is flat), I start laying the first layer from the edge to the inside of the tray, then I start the second laying between the first two layer (like a step). Since the tray is round I leave the center empty and the rest of the fruit I cut it in cubes and I fill the center with it. No I don't glaze the fruits. Thank you for checking my video.
Oh, so you layered the watermelon like a donuts shape (two layers of watermelon), then layered the pineapple in a smaller ratio over the watermelon. Then topped with kiwi, orange and strawberry. And diced fruit in the empty center.
Correct?

from chef to chef i would like to know how you did the center part looks like cantalope tops ? if they where what kinda of carving tool did you use to etch them very nice work on the doves btw... could you respond to me personally on my page thanks so much .
