how is it that i look for midwest comfort food and i come up with squirrel recipe?

i am raised in missouri and think all of my comfort food comes from other ethnic recipes, i.e. pizza & backyard bar-b-que. what else do we have to offer that we can claim as our own uniqe comfort food?

Any recipe calling for chicken can substitute squirrel.I'd recommend simmering or boiling the meat first to remove the bones.

I never would have thought of using squirrel for sausage. Crazy!
