GR is by far the best teacher of any of the "TV chefs" I know of. He doesn't just show you the recipe but is full of tips and useful information to make you a better home cook in the future. I really wish he still made TV shows like this.
@BeardedDanishViking False, a good chef uses the correct amount of salt. Salt opens up flavor to pronounce the flavor of what your cooking. Not so it tastes like salt.
@Gooseman2k2 becuz those coarse sea salt is not as salty as normal table salt....so if u plan to season with ur table salt....cut what he seasons for 2/3!!

I think you just didn't know how to manage the right amount of the seasonings. This dish is absolutely great with its perfect saltiness and the fullness of the other flavors. Thank you
I think he did so because he wanted to keep the mushrooms in big solid pieces this time, rather than form sort of a paste with them. I'd imagine both ways works the same.

I tried this, it's not bad but wasn't great. I preferred his sticky lemon chicken.
Advise to anyone trying this, leave the spinach and mushroom drain even in the fridge after you add the egg and cheese.
Also use a LOTS OF string!
