for techniques for the sims 2 game, i suggest you go to britannicadreams (dot com), they have various lists of camera techniques, custom content and hacks that are useful in making sims 2 videos.

for using AE, i suggest you go to creativecow (dot net), i believe they have lots of tutorials for after effects that are easy to understand, especially for beginners.

For that, you can use decorgal's model poses overlay hack and the talk overlay hack. You can use this to determine their stance/pose.

Then, overlay talking using decorgal's standing/talk conversation hack, that way they will talk while retaining the pose they have.
