Dang....I get annoyed if a GOOD restaurant doesn't use fresh, homemade pasta (soooo much better than boxed stuff and super easy to make). What sort of "Chef" would teach a technique no respectable restaurant should EVER do to pasta?? Does he even know how gummy/bad he is making it? Sure never want to eat where he's cooking!!!
Think I'll stay home, make my own pasta....it will be FAR better than this! This guy should have been embarrassed to post this IMHO!

why would anyone at home par cook their pasta. Restaurants shouldn't even do it. It compromises the the texture of the pasta.
