People do it in all the ways you mention, Cocoa. Some make a very detailed drawing and let the pencil marks become part of the finished painting, others will make a sketch, while others will just rough out the proportions. Depends on the subject matter and the artist.

Watercolor CAN be a CONTROLLING medium.. Don't fight the trying... We are all striving to "be ourselves" and when you contradict a "style" it's non worthy in my opinion. If someone wants to "go out of the normal rehlm, then more power to them" Sorry, just my feelings.. :) I wish you well, my comrade.
My art teacher at college was chinese and taught us chinese brush painting. I still do it. It's actually a very contemporary way to use watercolor still.

I'm not critcsizing your style.
It's the thechnique.
Someones "style" may be to ride a motorcycle facing backwards and that's a feat. But they'd better have practised well before doing it.

I would suggest a larger brush and an attempt to cover as much of a shape as possible with one juicy stroke. You have a tendancy to dab a bit.
