I don't understand why every app has to copy Coverflow. Coverflow looks impressive, sure, but it doesn't really add anything useful; it's a very limited method of browsing compared to a traditional, 'boring' icon view.

Because coverflow is -apple and -proprietary only. This is opensource and gnu. There may be plans to integrate it in desktop, as well or use its code to improve existing linux file managers.
