I don't think that it is so obviuos that the dog wanted to save the man's life. The dog was not the guy's dog., so no attachment.
Plus the dog was a bull terrier. It is also possible that he saw the bull and just attacked, Just like most dogs would attack a fox..

It's the one trick a man has against a bull is they can't do tight turns, at least not at first.
