I have got a very good hint for you to keeping the nice old Engine in good shape with todays ultra dry eco fuels: Use 1:100 API TC two stroke oil / fuel mix as regular driving fuel, that keeps the old fuel-system gaskets, rubber parts, alloy parts etc... and cast iron metal surfaces of those vintage engines in excellent shape...and it also lubricates the valves and upper piston regions. Most Porsche vintage owners in Germany do so :) Also keeps carbs and tank clean and rustfree

if the person was to change gears he would need to put the clutch in therfore the car will be idle until the gear is in, so would he stall everytime he lets go off the aceelerator

Give it a tiny bit of gas if you need to and let out the clutch aaaand... there you have it: no stall, even with the lope, if we're talking about taking off from a stand still.
If he changes gear then the car stalling out would not be a problem. The car wouldn't reach idle by the time he finished the gear change (in about 99% of circumstances), and even if it did, he'd be okay.
Actually, those sound like Cargraphics to me. The ECU seems to have an automatic choke, as opposed to a manual choke as appear on track cars with full blown ECU's. Without going into too much detail, this makes cold starts much easier on the motor; very clever to incorporate that into a street car.
Choke? WTF dude. The car is EFI; there is no "choke" the computer handles cold start enrichening. Big cams can cause a wacky idle but it does sound like a faulty ICV I'm afraid mine does the same thing at the moment.

because the camshaft is designed to make power at speeds well beyond idle so at idle its almost stalling

the ECU has been reprogramed to gently rev the motor until it reaches operating temp.
