  • Okay, I was being sarcastic, but I hadn't actually watched the whole episode yet.

    It's a pretty common stereotype in restaurant kitchens that black people like all meats well done, and are afraid of getting sick from medium to rare steaks. So now that I've seen the actual bit, I agree that this was inappropriate.

    Alton said in another episode that they "can't say stuff like that" on tv, in reference to women liking tender meat. They should be more considerate here.

  • I don't see anything stereotypical or racist about this at all. They are making fun of the DINER which overcooks everything, not the black patron. The DINER overcooks the pork, so the patron can't talk to Alton because he's busy chewing and chewing. Hence Alton's phrase at the end, "he, you can talk and eat at the same time!"

  • At the very end, it reveals the black guy at the table while Alton is trying to convince him that it's safe to eat pork cooked to medium. That's the same as revealing a black guy while he is saying watermelon isn't appropriate to eat with fried chicken.

    Please, accept the mystery. Culture clash.

  • The reason he is sitting there at the end is because they are both in the diner in the opening of the show, Alton talking about how pork is often rendered unpalatable, and the other patron is just chewing and chewing while Alton talks, because the pork was overcooked -- nothing implies that the patron ASKED for it to be overcooked, and everything implies that he doesn't like it, for he enjoys the pork Alton offers at the end. That's it. Nothing racist at all about it.

  • I'm assuming you mean "why should I use butter only if I'm not concerned about my fat intake." Well, you'll notice I said replace the "Light" brushing of oil with butter... Lots of it. Really make sure it has a chance to coat and cover the meat.

  • I seem to remember hearing him say "90 degrees" the first time I watched this episode, but the closed captioning had the corrected 45 degrees. Apparently, watching this, they went back and corrected the audio at some point.

  • He says the secret to grilling pork chops is to sear them over high heat and then finish them over low heat. He does move two of them to the upper rack to lower the heat, but the other two never went through this process of high heat sear to low heat finish. I tried this recipe a few months ago and after all of his steps my chops were 110 in the center and dry as a bone. Any help?

  • Two things come to mind first: 1 - his chops were very thick and perhaps yours were thinner; or 2 - the temperature in your oven is off. I'd check those two variables first.

  • I did cook thick chops - I even bought the cut Alton uses. With regards to heat: I grilled them, but I would certainly agree that my grill could well be off target because I am sure the heat is uneven. I think I went wrong when I used every drop of the stuffing, ignoring the "stuff them conservatively" closing remark.

    I appreciate your comment. Do you agree he skips the finish at low heat step in the show?

  • He probably considers the "resting period" the same as finishing with low heat. They will continue to cook slightly even after they're off the heat.
