Because Hermioine's color choice of blue says so much about her character. Hermione was never a girly-girl and was contemptuous of pretty girl things, like when Lavander and Parvati would talk about make-up and things like that. She would NEVER wear pink if she could help it. (So, it's completely unlike the real Hermione to wear pink.) That's why ppl have problems with it--because it's anti- her character. It's beyond just a pink dress v. a blue one.
