I loved James, he taught me that not only didn't cooking have to be tough, but that it could be fun. Cooking shows of today could learn a lot from the Urban Peasant.

Well, it was a Canadian show after all, and it reflected that: the desire to be pretentious and holier-than-thou while at the same time being salt-of-the-earth Common Folks. Total identity crisis on hell's wheels and this is the result: a vaguely British accent giving half-assed direction that's both too fussy and too sloppy, all at once. What a joke.

That 'Welsh rarebit' was way too liquid - it's meant to be welsh rarebit - not a cheesy soup and it's meant to be on toast - those bread slices looked completely untoasted.

I'm with you Lalo. From the first step you can tell this guy has no idea how to cook. He put whole butter into a pan that was way to hot and it immediately burned; you can see it brown when he tips the sauce pot. That was more like a Tbsp of dry mustard, and the cheese was broken in the sauce. He's fun to watch tho, but I'd as soon eat from a trash can.
I'm sure that's nice but if anyone's actually going to make welsh rarebit you need to use a good ale, a strong cheddar and a couple of egg whites. The egg whites are added when the mixture has cooled. Pour over the toast and warm it up under the grill.
and you get a knife and fork, and eat it! lol, classic! I watched this show when I was younger on a CBC, (Canadian broadcasting corporation) I don't know if its showing anywhere else in re-runs. I don't have the Food network :(
I don't remember what James was cooking on one show, but he said the best part of adding half a bottle of beer to a recipe was that you could drink the other half while making the dish! I loved that sense of humor he had.
i seen his shows 10-12 years ago when i was like 12-13 yrs old with my older sis.. i didnt care much for cooking and thought his dishes were weird. now my ass is grown i accidentally stumbled on his show "urban peasant" , i realized how much i missed it and jus watching him he was a really cool guy. i can go on and on and deeper into my thoughts of him but it'd be impossible thru here atleast.. anyways R.I.P. i used to just love this house and it's the same with me, i didn't really care too much for the cooking, it was just the atmosphere of the whole show.
i just finall saw this today, and almost cried because it just makes me remember how much i used to love sitting around watching this show when i was a kid :) !
I agree, when I was little, I could've cared less what James was cooking. The half hour spent watching the show was like being with an old friend or a kind grandfather. You valued the time no matter what you were doing

ive been a professional chef 12 years and i cant for the life of me figure out how they gave this character his own show he is as brutal as they come!
Just relax a little bit and ease the broomstick out of your ass. James wasn't a professional chef, but he cooked with a wonderfully lusty "booze and butter" passion that I think most professional chefs are sorely lacking.

After pouring over the toast put it under a grill for about 5 minutes or until the sauce gets browned on top!

Tried it, very nice! Although my Welsh family would use this similar recipe:
25g Butter
150ml Welsh ale, or milk
175g mature Welsh farmhouse Cheese
25g Flour
1/2 tsp prepared mild Mustard
2 egg yolks
4 slices bread
not sure its any better but is authenticly Welsh
