  • Don't forget to get a knife and fork, and eat it

  • WTF????... How to get diarrhea 101, you might as well have shit on the plate and served it.

  • It's just as good sprinkled with paprika.

  • Welsh rarebit is one of my favourites. Especially if it is made correctly. Cheers

  • I loved James, he taught me that not only didn't cooking have to be tough, but that it could be fun. Cooking shows of today could learn a lot from the Urban Peasant.

  • Ah, my granny used to make me this at lunchtime when I was in primary school. I thought after years of wishing I could make it, I should just go check :) Thank you youtube!

  • Simple Dishes are the best! Looks so delicious.

  • Right! Now!

  • All wrong. Don't you have to oven bake it to crips up the bread and the cheese? And it doesn't look gd. Like some cheap Campbell soup being poured onto bread. Yuck.

  • awww, i remember this guy! he always gave me the warm fuzzies. nice, homey, unpretentious cooking. thanks for posting!

  • I grewup watching his show too. I later got to meet him he was a great guy. Sadly he passed away a few years ago. interestinglhe had a pot f stew on the stove ad I believe a cookbook in his lap

  • I love how he doesn't use any measuring instruments----that's REAL cooking!

  • yeah I grew up with him on the cbc too. back in the days before the food network existed. I never really understood half of the show as a kid, but watching these clips on youtube its amazing to see his easy going approach. something lacking from today's shows.

  • I loved James - his books are awesome - folksy and fun to read. He had no pretensions and knew what tasked good. Awesome.

  • "Then you get a knife and a fork, and you eat it."

    Hilarious

  • I watched this guy as a kid. I'm not really sure why. I couldn't cook, and didn't really understand what was going on, but I watched him anyways for some reason. Haha.

  • The gallant Welsh of all degrees

    Have one delightful habit

They cover toast with melted cheese

And call the thing a rabbit.

  • "Cooking Channel"

    Classic Cooking..

    Coming Soon...

  • I love his show. I actually saw him live at a local market on my birthday. I mentioned it afterwards when most people were gone. I was a bit shy than. He is such a cool guy. I enjoy his style and have a 3 his cook books which are terrific.. I think the most memorable reciepe was a spicy chocolate dish with I believe it was chicken. I thought it was odd but than again at that age I was not cooking that myuch although I did enjoy it. RIP my friend and thanks for the great memories

  • That 'Welsh rarebit' was way too liquid - it's meant to be welsh rarebit - not a cheesy soup and it's meant to be on toast - those bread slices looked completely untoasted.

  • Did this guy ever actually eat the food that he cooked on his show, or did he just give it to the cameramen?

  • yum yum

  • His food doesnt look that appetizing, but he is fun as hell to watch. I stay up til 1:30am to watch his show.

  • After pouring over the toast put it under a grill for about 5 minutes or until the sauce gets browned on top!

  • I do it with:

    Cheschire cheese

    Dry mustard

    English muffins

    Egg

    Worcestershire sauce

    Butter

    Salt & Pepper

    Beer

  • Can't believe I never knew about this guy. Great personality. May he rest in peace...

  • Thank you!!! Would love to see more of these :)

  • Tried it, very nice! Although my Welsh family would use this similar recipe:

    25g Butter

    150ml Welsh ale, or milk

    175g mature Welsh farmhouse Cheese

    25g Flour

    1/2 tsp prepared mild Mustard

    2 egg yolks

    4 slices bread

not sure its any better but is authenticly Welsh

  • What a stud

I love welsh rarebit. Awesome meal.

  • What type of beer did he make? this looks good...im gonna serve it like a fondue!

  • I miss him too. He had a way of cooking and talking that was unique. His shows were relaxing and interesting.

  • I learned all my basic cooking skills from watching this guy.

  • i remember growing up and watching this show. So saddening that he died. Brings back memories... i really liked his show.

  • this was my fave cooking show when i was a kid. :]

  • Fuck Hell's Kitchen...this was my fav cooking show growing up!

  • I loved this show when I was a kid.

  • thank you for posting

i learned how to cook with what i 'got' by him

    nice and easy

  • i used to watch this

  • Me too. I miss James and hope episodes of the Urban Peasant will be posted eventually.

  • I'm sure that's nice but if anyone's actually going to make welsh rarebit you need to use a good ale, a strong cheddar and a couple of egg whites. The egg whites are added when the mixture has cooled. Pour over the toast and warm it up under the grill.

  • I found his program quite relaxing, and I really enjoyed his sense of humour as well.

I have a couple of his books. They are full of amusing anecdotes.

    Thanks for posting!

  • and you get a knife and fork, and eat it! lol, classic! I watched this show when I was younger on a CBC, (Canadian broadcasting corporation) I don't know if its showing anywhere else in re-runs. I don't have the Food network :(

  • its shown on the one channel i think once a week not sure though its a channel on satalite

  • Its on an American channel late at night called Ion. Sort of a family, health, living channel. Used to be called PAX TV.

  • Thanks for posting this! Can we get more clips from the Urban Peasant on here??

  • Welsh Rarebit rules

  • that looks good :) especially with the beer :P

  • Haha! Definitely! :)

  • I don't remember what James was cooking on one show, but he said the best part of adding half a bottle of beer to a recipe was that you could drink the other half while making the dish! I loved that sense of humor he had.

  • i miss this guy : (

  • i seen his shows 10-12 years ago when i was like 12-13 yrs old with my older sis.. i didnt care much for cooking and thought his dishes were weird. now my ass is grown i accidentally stumbled on his show "urban peasant" , i realized how much i missed it and jus watching him he was a really cool guy. i can go on and on and deeper into my thoughts of him but it'd be impossible thru here atleast.. anyways R.I.P. James Barber

  • That is quite possibly the most thoughtful comment I've seen yet in this den of trolls. Cheers mate, A.L.

  • @ALSmithey Mwhaha, so nostalgic. Oddly enough, he use to strike me as a drinker. Then the evidence would weigh in when he would take a swig from some random bottle he was cooking with...R.I.P Jame Barber.

  • omg, same with me.

i used to just love this house and it's the same with me, i didn't really care too much for the cooking, it was just the atmosphere of the whole show.

i just finall saw this today, and almost cried because it just makes me remember how much i used to love sitting around watching this show when i was a kid :) !

  • I agree, when I was little, I could've cared less what James was cooking. The half hour spent watching the show was like being with an old friend or a kind grandfather. You valued the time no matter what you were doing

  • I see...

So what time does your television show air?

  • hahahahahahha :)

  • Just relax a little bit and ease the broomstick out of your ass. James wasn't a professional chef, but he cooked with a wonderfully lusty "booze and butter" passion that I think most professional chefs are sorely lacking.

  • Oh shit! Classic find! I love that guy! "Just put a little beer in there"!! He put booze in everything! Thanks Smithey! ;)

  • any more episodes!?

  • any more episodes?!

  • It always surprises me how fast these pro chefs can whip up a meal ;)
