  • You can find lecithin at any health food store. Lecithin will keep the butter oil and sugar/water from separating. Steven - Columbine Toffee

  • Baker's Special is a C&H Sugar product. It is a very fine granulated sugar. Not quite as fine as powered sugar, but still very fine. By the way, powdered sugar cannot be used because of the no-caking additives.

  • England and NZ are very alike when it comes to ingredients etc. I think they are talking about caster sugar.

  • This is fantastic. I just tried to make my first batch of toffee and I burnt the sugar (and filled my apt with smoke). My second batch will be much better thanks to this video!
