  • he is (dressing the wheel) taking off high spots that make the knives skip when the wheel is turning.

  • Adding grooves to bring up water better.

  • Yea if you see how he angles the grooves in the wheel its like a V shape of grooves in the wheel

  • ye i think he is adding ridges to both pull up water and add more bite to the wheel, maybe a bit like deglazing a water stone, only more agressive.... dont know why hes using a cleaver though?!?

  • I would also think that he is hacking a criss-cross pattern into the stone. This is most likely his coarse stone so the pattern will probably help to transport enough water in order to cool the blade while grinding.

  • Maybe he's putting some ridges into the wheel for a bit of bite

  • Creating a new angle....? OR possibly cleaning that lovely wheel of his :D
