The only things I would leave out would be the carrot and onion and add in some canned chopped pimento instead. Other than that......great recipe. I guess it boils down "to each his own" where taste and preference is concerned.

I like using red bell pepper in mine. It adds another color component and also has a sweeter taste than the green pepper.
