Easy...cook the cake or any other desert just like you would in your "at home" oven but be more vigilant about checking for doneness.
I've found that the temps are irregular so if you need 30 minutes at 350 I'd start checking at 20 minutes. Also, move the pan around a bit to help with even heat distribution. Trader Joes has a killer cornbread mix that turns out beautifully in my RV oven.

When RVing, we always have more time to focus on cooking, That their, may explain our love for RVing!
