I wonder if the crocs wonder where Steve is. Wes is probably a little fightful because he got attacked by Graham a few years ago. I'm sure he doesn't want that to happen again.
They also would tie a hunk of meat onto a rope and move it around the edge of the water to imitate a wild pig or other animal, and when the croc bit into it they'd put resistance on the rope and pull, for the realistic feeling of taking on live prey. They also do this in the Terri Irwin + Wes shows too, near the end.
And by the way, to all you commenters below saying they're "torturing" the crocs or whathaveyou, they do these kinds of shows only if the crocs are willing. They do feeding like this in the croc's individual encolsures for enrichment, too, to keep their minds stimulated so that the crocs feel as though they're in the wild (when they dangle the meat over from the platform, it imitates the fruit bats that dangle from trees over rivers. This is not an uncommon occurence in the wild for a croc!)
I volunteer at this zoo (dream job!!), and I assure you this is part of the show XD They do it every day (during the school holidays, when they do the show with Terri and Wes). I was amazed when he said shit but when I saw him to do it the next day.... not so amazed XD

They did have the camera on Steve when he was speared by the stingray, but wouldn't show it. Just today I was down the road, still huge billboards of Steve remain, RIP buddy.
