  • i have learned cooking after coming to USA following most of yout recipes..You guys were really helpful..even now. u give perfect measurments and details. U guys didnt let my husband know that i was afraid of cooking. thank u so much. no words to show my gratitude.

    only 1 question i have about this recipe.. why u didnt add chopped onions and coriander powder.. see i have never eaten eggplant before. i m cooking this for my husband hope he likes it.

    Give this recipe a try as we have suggested it, the flavors are amazing! This recipe is inspired from Acharai Baingan and you will not miss the onions and the coriander at all. Also, we try to show a variety of dishes with different flavors and if all dishes had all the basic ingredients, then all the dishes will taste the same :)

  • Cumin Powder instead of Cumin seeds? You can add in powder instead but not in the oil...add it after you add the eggplant in the pan.

  • you are great...but want to add some points.....as derubala said...i also agree about it.the order of putting seeds....

    another thing is please try to add some water with the spice powders like haldi....because if you put it directly in hot oil,it changes the original colour &taste as it gets burned..so make paste of the powder with little water.

  • I've noticed that on your videos, as well as others on Indian syle cooking, that all the cooks use deep pans that slope to the bottom so there are no right angles in the pan. This seems to me an excellent design for foods that have a sauce component. I'm having trouble finding a pan like yours, can you tell me where I might find one on the net? Thank you for the videos-I just discovered them, and I'm really enjoying them.

  • These are wok-style pans. You can find them at Bed Bath & Beyond or Macy's. They work really well for easy mixing. Good Luck!

  • Also always start Mustard seed first, let it pop, sputter and when it turns gray , than add methi, jeera, ajwain...(in that order) methi take long time than jeera, jeera take little time and ajwain takes no time to be cooked in hot oil.

    adding jeera and ajwain first you are making a hot oil cool, mustard seeds needed to be sputter other wise you have to grind with your teeth when you eat.
