this guy does not know what he's doing. a fried rice is not done that way.... i'm chinese so i know. we do not throw out the oil and use only the browned garlic and ginger.. we use the oil too! and never have i heard of soy sauce being added AFTER the dish is done. this is ridiculous. you Americans are being fooled.
beautiful in it's simplicity...the crispy ginger and garlic looks great. My only criticism would be the quantity of soy sauce he just used...seems like too much, especially considering he added salt already to the leeks, and for such a small portion too...am I alone here?
He actually left out a couple of steps from Jean-Georges's original recipe: 1) Steal some tips; 2) Go buy some eggs. After that, pretty much the same.
I made this and it was awesome. Season to taste.

@anneyuki I would have thought it was too much sesame oil. Sesame oil has a very strong flavor. A little goes a long way.
