Probably the pot of hard boiled eggs are to be stewed in the meat sauce to make 滷蛋, or called by some people 醬泡蛋. I grow up with that stuff. It is delicious! But be careful: the higher salt content in the soy sauce-based meat sauce would draw the water content out of the eggs, thus diluting the stewed meat, although making the eggs very flavorful. (Egg is ~70% H2O. ) One can also stew kalp, compressed tofu, etc. in the meat sauce.

your making pork belly or cow tendon or pig feet and using the soup to make the egg have better flavor
