  • what's the sauce made from?..i've been making Ma La Do fu (same as Ma Po To Fu) basically, but the best flavor is when I use the ready-to-go ingredients/sauce from the supermarket. Still, i'd love to be able to make the ingredients my own.. thanks in advance for the info.. :)

    it is westernise verison of ma po tofu

    first a chinese cook will never put the spring onion during cooking

    second , ma po tofu doesnt contain soya sauce

  • just cooked up this recipe. its tastes pretty good. although, its not quite "traditional" american chinese.

    i've travelled all around china and i can tell you that they cook the dish differently in each region. there isnt a standard for how this dish is cooked.

    in cooking her dish, in order to reach the amount of fat in the wok as her's in the video, you have to use a fatty quality of beef. so that the beef will render most of the fat as a sauce. otherwise, you'll end up with a dry dish.

  • some people keep blaming the way that she cook isn't right. Come on, there has no right or wrong of styles of cooking. Consider that the dishes are doable at home and the healthy trend in world wide, Will you deep fry the chill nad pepper in hot oil at home? Not even got wok like Chinese too.

  • Chef Cheng did an excellent job of educating the public about the sophistication and complexity of Sichuan cooking. I believe there are many who assume that Chinese cooking is just stir fry with soy sauce.

    By the way MAPO is actally a grandmother name MA and make the rest of the food such as tofu, and some prok then make a dish for a farmer to eat after that it create a dish call ma po tofu

  • cantonese put oester source in every thing. god. dont put it in ma po dou fu and add a little water and let it stew for a while so the flavor goes into the doufu.

  • its not cantonese there called chinese people. and thats how you make it you put oyster sauce in it. what would you use then
