just cooked up this recipe. its tastes pretty good. although, its not quite "traditional" american chinese.
i've travelled all around china and i can tell you that they cook the dish differently in each region. there isnt a standard for how this dish is cooked.
in cooking her dish, in order to reach the amount of fat in the wok as her's in the video, you have to use a fatty quality of beef. so that the beef will render most of the fat as a sauce. otherwise, you'll end up with a dry dish.
