Darlin', Using your hands is what great chefs do to determine the mixture, wetness, texture, etc...so don't worry about it. RECIPE Q: I didn't catch how many cups or what the weight of flour you used. Do you ever use whole wheat or wheat germ to add to your recipe? I got some raw milk from a local dairy, made real cultured buttermilk, and tried to make bisquits. They were OK, these looked better.

sometimes, my wife will add garlic powder to the dry incredients and a cup or two of grated sharp cheddar cheese as she kneads the dough to make garlic cheddar cheese biscuits-- yum!
