They are not even using natal's motion sensor, they are using a 3VD cam! Look at 0:05, it has been censored, blurred out so that we can't see they are not even using the hardware. I think that this demo is as reliable as a prerendered CG concept demo.

If you can't see the possibilities, then leave it up to the developers to figure that out for you, but I can see many cool ideas, just pictures a boxing game where you duck, block, weave and punch your way to a win or party games where you jump over obstacles, duck, dodge or swing at objects to score, sounds like hours of fun to me :p
