@Priyotome, this recipe can not be alterd. self rising flour has a kind of baking powder added to it, has no smell or taste of baking powder. thats why this recipe is one of the best.
@Bajiascooking Actually I did use an egg...it didn't change the taste and I realized that the egg is the secret missing ingredient for a perfect authentic gulab jamuns..It gave it that authentic spongy texture we all are familiar with in a regular gulab jamun ..

Surprisingly, it turned out to be a lot more easier than I had imagined. Made about 20 gulab jamans, got a bit over fried so looked more like kala jamans but were truly scrumptious. Can't wait to make them again but till then I will have to content myself with looking at pictures taken before they disappeared.

@nikkigrg, to be honest, not every one can get it right. no matter how much you try you fail. its just bad luck sometimes. you have seen in this clip how they were made perfectly. with some people its always right. never goes wrong. give a break and buy new things and try them again later. write to me what happens so i think about what went wrong.
@nikkigrg i was the same..i tried all kind of recipes for gulab jamun but they didnt end up like the traditional gulab jamuns we all know...i tried a recipe for a pakistani guy on youtube i don't remember his name and it turned out perfect...i realized that that the secret ingredient for the perfect gulab jamun is an EGG...

hi bajia my jamuns are great. for home made self rising flour i used ( 1 cup all purpose flour,1/2 tsp salt,1 1/2 tsp baking powder). and my cream was not the thickened cream just the ordinary whipping cream so i would say 1 cup and 3 tbsp is perfect( approx 300 gm). other thing i say is that we boil the syrup for 13 mins that would be ok. but it came out perfect like yur video. added some rose water in syrup.
Hi, I tried to make these jamuns with home made self rising flour as you had written. 1 1/2 tsp baking powder was too much for one cup flour. Either you have a very small spoon or a very large cup :)
Will try with less baking powder next time.
Self rising flour isn't sold where i live. And 300 grams whipping cream was the same as one 1/3 ltr box.
@mfarah04, great, next time get self rising flour. gulab jamun made with baking powder has its hamak always, pinch of salt is ok, thickend cream in here is standerd fresh cream. you did well :)

Hi. I tried makin these yesterday and everything was goin fine till I started frying them and everything started falling apart. Why do u think that happened? And how much is 300g cream in ml? And how much oil do we need to fry and how do we make sure the heat temp stays put? U make it look so easy but it's not for me. Hehe =^__^=
@nikkigrg, keep on trying once you get them right you will always get them right after that. making gulab jamun, rasmalai kind of things are not easy. you need a bit of good luck too. i have no idea how much 300g is. you need plenty og oil. when you see oil is light like water but not smoky then its ready. may be cream is too much. watch the consistency again and again

@L0lal0la23, It should not be crispy, the texture is usually very smooth, and easily moulded. I think milk and flour is more than cream. Look at this recipe several times before trying again. Don’t fill your cups too-too much of milk and flour. Pour cream mix and see.
@L0lal0la23 just a thought...did you use self-rising flour or regular flour? If you used regular flour, you're missing the baking powder which allows the balls to puff up a bit (plus the salt which will affect flavour)
that was a mistake to make it in half. you will never get it right. making gulab jamun or ras malai is a tricky buisness. never try to double or half the ammount.

Ps what is thickened cream, is it double cream? And if u can't find full cream powder, could u use skimmed milk powder instead?
My pani puree is not perfect :) I can get everything in here but distances here are too much. I often get what I want through phone order. But the thin I use once a year I don’t keep. Being a very clean person :) all goes to the bin :)
cream is just basic fresh cream, skim doesnt have taste
kala jaman aur gulab jaman main ferq ye hai ke kala jaman paneer se banta hai aur gulab jaman khoye se. eak meri friend theen indiase wo banateen theen yoonhe meri terha fake wale :) wo aata 2 cup aur doodh eak cup ker deteen theen. try ker lo per zaya na ho thora sa dekhna bana ker.
oh sorry :) kala jamun is made with cheez, gulam jamun is made with khoya. i had a friend who use to make kala jamun with 2 cups flour and one cup milk ratio.

Make sure you buy the baking powder without aluminum. That causes the smell and ruins the taste. I will try thus recipe with self raising flour. Shukriya for sharing

@madihaaquarius18 the basic recipe to make self-rising flour at home is 140 gms flour +1 1/2 tsp baking powder +1/4 tsp salt. but it is better to use ready made selfrising flour from the market as the proportion of the different ingredients r exact and Bajia has given her tried and tested recipe using it. kepp up the great work u r doing Bajia and we all r always waiting to learn new recipes from u . the first time I made this, it was perfect and inside the gulab jamun was nixe and spongy and soaked with the sirup. But now everytime I make it the center is hard and still dough like. It still tasted nice but what am I doin wrong?
Get fresh flour and fresh milk from the market. Let the heat stay constant, do not fry more then 10 at a time. Adding more means dropping the temp not to their likings!

@L0lal0la23, It should not be crispy, the texture is usually very smooth, and easily moulded. I think milk and flour is more than cream. Look at this recipe several times before trying again. Don’t fill your cups too-too much of milk and flour. Pour cream mix and see.

@L0lal0la23 just a thought...did you use self-rising flour or regular flour? If you used regular flour, you're missing the baking powder which allows the balls to puff up a bit (plus the salt which will affect flavour)

150 gm 35% whipping cream
and then i knead it with hands first it was veri sticky but after 4 or 5 minutes it was perfect dough very soft i did not use any butter .
should i use less cream?
i am trying gulab jamun from one week even with khoa but the results are same.
i have to make it on my job in resturant .

that was a mistake to make it in half. you will never get it right. making gulab jamun or ras malai is a tricky buisness. never try to double or half the ammount.

o ho, dough ko bante ghaur se dekho is film main baar baar. us ki consistency per ghaur karo. jab gola banao to koye crack na dikhey, ya butter zara sa bhi ziyadah hone per yoon ho sakta hai. cream bhi thick ya thin ho sakti hai. isi liye consistency per dehan do. us hisab se phir eak aadh spoon aur kuch add karo ya nikalo

Salam. I started watching ur videos yesterday. I am 14 and love cooking. I'm gonna make the gulaab jaman, wish me luck every 1. Please could u put up some vids on how to make chutneys and pani puri/gol gappay. I'm surprised u cudnt find the gur. U can get it every where from here. Are u from america? Ps what is thickened cream, is it double cream? And if u can't find full cream powder, could u use skimmed milk powder instead?

My pani puree is not perfect :) I can get everything in here but distances here are too much. I often get what I want through phone order. But the thin I use once a year I don’t keep. Being a very clean person :) all goes to the bin :)
cream is just basic fresh cream, skim doesnt have taste

kala jaman aur gulab jaman main ferq ye hai ke kala jaman paneer se banta hai aur gulab jaman khoye se. eak meri friend theen indiase wo banateen theen yoonhe meri terha fake wale :) wo aata 2 cup aur doodh eak cup ker deteen theen. try ker lo per zaya na ho thora sa dekhna bana ker.

oh sorry :) kala jamun is made with cheez, gulam jamun is made with khoya. i had a friend who use to make kala jamun with 2 cups flour and one cup milk ratio.

@madihaaquarius18 the basic recipe to make self-rising flour at home is 140 gms flour +1 1/2 tsp baking powder +1/4 tsp salt. but it is better to use ready made selfrising flour from the market as the proportion of the different ingredients r exact and Bajia has given her tried and tested recipe using it. kepp up the great work u r doing Bajia and we all r always waiting to learn new recipes from u . the first time I made this, it was perfect and inside the gulab jamun was nixe and spongy and soaked with the sirup. But now everytime I make it the center is hard and still dough like. It still tasted nice but what am I doin wrong?

Get fresh flour and fresh milk from the market. Let the heat stay constant, do not fry more then 10 at a time. Adding more means dropping the temp not to their likings!

Thankyou baji for all your wonderful work.I was on the lookout for vegetarian dishes and found your daal recipes.I have tried almost all of them and like them ALL.I really like the fact that the videos are almost always less than 5 mins which is very convenient when one is busy and has kids.However, I would like to mention that you use a lot of oil.I know that it affects the taste of the dish but I am a little worried about you and your family .Saturated fats irreversibly harden arteries.

Is me self raising flour dalta hai, so there is no need for baking powder. Self raising flour is not a standard flour.
