In a jet your initial acceleration is very slow but by the time you reach take off speed your acceleration is much faster than a prop plane. It would depend on the plane but I"m sure an F-16 would have no problem attaining the speed required for the roll during its initial climb.
Most jets today are actually turbo-fans, which means that they are part jett but they also get a lot of thrust from the fan blades in front (like a propeller). That gives them better low speed acceleration.
Prop planes are much better for aerobatics because you can do so much more.
Every manuever has a minimum entry speed to ensure there is enough energy to complete the manuever. Often times you have to dive a bit to gain it (although technically all manuevers start straight and level). However, entering a manuever from an initial climb out is very difficult because it would be hard to gain proper speed. For instance, most of what I've flown has a roll entry speed of 120 knots. Climb out is 90.

In prop planes the smoke is something that is injected into the exhaust of the aircraft. The exhaust heats the stuff up and makes the trail that you see. Basic white smoke is generally just injected oil but you can buy all different colors.

Airshow flying is always about safety-you fly the showline limits and think about the wind and positioning of the maneuvers on every set up. Always plan for the unexpected and unthinkable. Never overfly your personal minimums, evaluate them yourself and reset them periodically. Have another performer critique your act and help set your limits, until you are at the level of a top performer. Even top civilian performers, the Blues and T-Birds make mistakes. Leave room for those mistakes.
But, levelhead, you are right that this guy did not have the good sense to not attempt a takeoff roll at his age and in a Pitts S!C. No need for that much risk. My low level airshow instructor's first words to me before we started training low level stuff were that the crowd can kill you-meaning people get caught up by the crowd and push their limits too far. Personally, I never noticed the crowd past taxi out., and the only time you think about the crowd is keep safe positioning from the crowd.
