do you tighten the lid for the kefir and yogurt or just rest it on top? also, could you blend the coconut meat with the kefir liquid instead of water and then not add anything else to it?
Pasteurized milk has no affect on probiotics being able to culture dairy.... that's not accurate at all. But good point that you want preferably raw milk, not pasteurized or homogenized etc. However they still will make live kefir from kefir grains or yogurt.
I got this inner eco coconut kefir with Trillions of probiotics and it is a month's worth of daily probiotics. I was wondering if I should guzzle this down since you said I can only keep coconut kefir for a week. the probiotics are not dead because i've had digestive issues for years, now that i eat yogurt that i bought at a regular supermarket warm and toasty my stomach issues have vanished. so... you're pretty much wrong

Hi, when you said that store-bought yogurt does not have active cultures because of pasteurization, I think its important to note that in most cases, pasteurization occurs prior to the making of yogurt. That is to say, prior to culturing. So to say that commercially produced yogurt/kefir will not have live active cultures because of pasteurized, is not accurate. You can culture pasteurized milk and coconut water. The culture only cares about sugar, which in both cases, is still in tact.
I tried growing from probiotic pills and wound up throwing the batch away - Next I got some water kefir grains from Yemous. My first batch grew kind of slowly (48 hours), but it was OK. The second batch I added one teaspoon of raw cane sugar to the quart of coconut water and the results were amazing. The fizz was audible from across the room in hours and the first stage batch was done in 24. A second 24 grainless fermentation ... Yum!

Wow, I always thought you needed some sort of starter to ferment coconut water. Are you really sure its safe to just let it sit by itself with no starter? What if the bad bacteria takes it over instead of the good bacteria?

Your welcome! I have tried this and it seems to work with coconut water about a day and a half in the cupboard and nothing extra added. It tastes a little sour so I figured it was done. I did not notice any fizzing though how to y ou know for sure if it is finished?
Sounds like its done!! You can just tell by the sour taste and definitely by the scent. The coconut water should no longer be sweet, but sour tasting. Enjoy!!

Your welcome! I have tried this and it seems to work with coconut water about a day and a half in the cupboard and nothing extra added. It tastes a little sour so I figured it was done. I did not notice any fizzing though how to y ou know for sure if it is finished?

Sounds like its done!! You can just tell by the sour taste and definitely by the scent. The coconut water should no longer be sweet, but sour tasting. Enjoy!!
