I like kimchi also. However I think irradiating it would kill the beneficial organisms and nutrients. And I think storing it in glass is far preferable to plastic. Only my opinion from what I have heard and read.
The fact that a Korean or anybody cant survive for 9 days without KimChi is just ridiculous. However, from a Cultural viewpoint to have Kim Chi in space is well worth the science research to keep up this space age tradition which will have relevance to other areas of science , food and technology too.
wonder how many wons or dollars to spend time to research, study, and work on this project....

I love kimchi too, I put it on pizza, hot dogs, corned beef, etc. YUM!
