  • Another important thing is the moka: a shitty moka pot will make a shitty coffee. Anyway: do your coffe as you want: follow your taste, not you tube or other people "how to"s.

  • I think the coffee brand is impostant, but not essential though. For example, even if i use a discount quality coffee, i still get a great and aromatic coffee. My rules are:

    1: fill the lower part till the safety valve;

    2: a lot of coffee in the filter (i like my coffee very dense);

    3: high flame at start, low flame when coffee come out;

    4: turn off the flame when half of the pot is filled with coffee and serve hot;

    5: most important: use a low capacity moka as possible (1 cup/3 cup max)

  • I have a moka pot, and filling it to the top I've found is a waste of the espesso mix... I usually use one tablespoon and it comes out great...

  • The bialetti is a fantastic little coffee maker, I've had one for year and swear by it and recommend it to anyone I know when the subject of coffee comes up.

  • @BboyFlimsy a percolator keeps the brew in contact with the coffee in constant boiling temps, this coffee maker runs the water through the coffee just once and keeps the brew and the grains separate afterwards.

  • Two things to note here. First, the water shouldn't go up past the valve in the bottom of the moka pot. This is probably pretty obvious, but it bears mentioning.

    Second, you can grind your own coffee for a moka pot - if you do, grind it to about the coarseness of drip coffee; it should in any case be coarser than for an espresso machine. Theoretically you could just use cheap Folgier's coffee or something like that (although why would you ever do such a thing?).

  • We add one more step in my Italian house we take the first little bit of coffee that comes up and add it to sugar mix it to make a liquidy paste tehn put the pot back on and when the coffee is done we add the remaining coffee to the "past" mix and serve. We still do this in Italy to this day!

  • Hey, this is the same kind of coffee which we make in Greece, Turkey, Serbia, Albania, Armenia, Arab lands and so forth! I bet that if Americans begin to make it, they will call it then "American" coffee...or in Canada, "Canadian" coffee!

  • @DieserBenuterIstCool sorry but for what I see on youtube is not the same as "italian" coffee. In the moka the coffee powder doesn't mix with the actual coffee. only vapor pass through the powder. On youtube I found only video of water mixed directly with powder for the greek and turkish coffee.

  • Other things to look out for, shade grown coffee (which is usually organic and fairtrade as well). Shade grown coffee has an earthier flavour than estate grown coffee. You can really tell the difference between the two. Estate grown coffee usually comes from Brazil and is grown out in the sun on plantations. Shade grown coffee takes much longer to ripen usually grown on forest floors in central America or southeast Asia.

  • There is no 'best brand' of coffee. If you want good coffee, make sure it roasted, blended, ground (if buying ground), and packed in your country. Do not buy any of those brick packs that have been imported from Italy, by the time they get to you, they are stale. Make sure the brick pack or beans you ar buying have been roasted, blended and packed in your own country from imported raw coffee beans. Better still, in your own city. The fresher the better.

  • @Deisinoful they mean the REAL coffe...the italian one which people usually call "espresso". the sturbucks' one has nothing to deal with the real italian "espresso".

  • @Helliland sorry, but to make an expresso you don't want to use a moka pot, by definition. Anyway what I referred to with my question can be read at 0:14. As far as I know we Italians don't crop coffee and import the one we drink from abroad.

  • @Deisinoful errore mio...di solito quando ci si riferisce al caffe italiano si intende l'espresso,e quello della moca è molto simile ecco perchè lo scritto. per la storia dell'importazione hai ragione, ma il caffe come bevanda viene spesso attribuita all'italia.

  • When I travel, I now bring my mini stove top with me.I cannot stand weak coffee.I have noticed,that most espressos are bitter. It took me some time to find the correct coffee which is smooth and excellent.Better than any other espresso coffee.

  • I'm italian, this video doesn't explain anything about making a good coffee.

    First of all: the coffee brand (illy) is a shit. Is better a "Vergnano" or a "Lavazza qualità rossa"

    2: how many water?? You must fill until the valve

    3: How much coffee?? You must put the coffee in the moka without pressing it, just make a sort of pyramid.

    4: the fire.. is essential. Use a low fire or you'll burn it!

    5: When you heard the coffee going up turn off the fire and let it finish by himself

  • This video is for REAL BEGINNERS, so I wouldn't be too harsh on them...why is ILLY shit? ...I never tried it but it is expensive...about $ 50 a kilo !!!

  • @Grievas123 I agree Illy is not the best, but it is not shit either. I very much prefer to ground my own coffee beams and I think that's the optimal way for serious coffee lovers. If I have to choose a commercial brand, I'd go for a Hausbrandt

  • Take it off about 5 seconds as soon as it bubbles. Don't keep it anymore because you will get burnt espresso. The extraction continues after you take it off the flame. Sumatra and Hawaiian Blue Kona is delicious.

    Together with a nice blend called "Milano" from the coffee & tea specialty shop near here frshly ground while you wait makes life worth while :p
