    I haven't made cheese yet. Cheese melts when cooked but paneer doesn't melt, no matter what temperature you cook.

    If more lemon juice is added, this may happen, allow it to curdle slowly after adding lime juice and then again add more if needed, and if you want real smooth paneer, add little flour and knead like a dough and then put weight on it...

  • I LOVE paneer, I want to try this but wondering:

    Looks like a gallon of fat milk will make only about 8 ounces of paneer?

    Does the milk stick to the pan and make it hard to clean up?

    How many pieces of cheese cloth are you using to press it?

    Can the cheese cloth be reused? Do you wash it or throw it away after use?

    Gallon of milk makes paneer for almost 8-10 people

    If you keep stirring, and if you take heavey bottomed (nonstick can be used), it won't stick.

    I take only one cheese cloth but place them in several layers by folding.

    It doesn't spoil cheese cloth much so I just wash and reuse.

    All we need is fat milk. If fat is removed from milk then you won't be able to get panner out of that milk.

    I have used whey to knead only all kinds of dough but not any kind of soup but sounds good. Try in small amount first.

    I think Bhavna's video are more homely and no annoying at all, everything clear as water...love her videos than anybody else...great for people like me!

  • I love Paneer and all the delicious recipes that are possible using it. But after I have made it myself once I am simply not ready to spend so much time on making it myself. Our Indian market has great Paneer ready to use.

    while making cottage cheese, do we have to use "fresh lime juice / lemon" or "ready lemonade" is working out there?? paneer is also made by yogurt na, in substitute of lime juice?

    Fresh lime juice is recommended for better result. I have never tried with yogurt. You can try in small quantity.

    Usually lime is used but if you have only lemon, they work both almost same as far as citric acid involved...

    As I said in video, if you adding herbs or spices, add when you add lime juice. When I add spices, I add crushed red pepper, cumin and little salt. For herbs, I add fresh Coriander and curry leaves, chopped very fine. But you can add your favorite herbs and spices...enjoy!

    Normally I used Cottage cheese when I make Lasagna or baking.

    I'll try hard Cottage cheese next time and can I eat with salad? wonder how that taste like!
