@merdadecadastro I think a better version would be to use an 18 hour starter, then mix the rest of the ingredients, good idea. It's not rocket science, but sometimes baking feels like it!
Whoa those look nice :D ..oliev oil then balsamic vinegar.. then parmesan.... aaah yummy!! Always have to buy those in a bakery... I think I'll try it ^^ Thanks for the vid!
@Brook61. Thanks for taking the time to post this. I've made allot of ciabatta in that past couple of years. I use one of the quick methods I modified a bit. I'm now looking to do a more traditional type ciabatta. Thanks.
@ainanor That is quite possibly one of the stupidest comments I have received, I will leave it posted. It is obvious you don't know anything about ciabatta.
@DRUMKIND I make it harder than it should be, maybe try a "no-knead" bread, you'll be happy. More and more videos are popping up on bread making, look for an easy one, ciabatta is not easy to make.
@stgheorgelegion Tell me more, come faresti tu? questa ricetta fa una ciabatta buona, ma se hai dei suggerimenti per migliorarla o se hai una ricetta autintica, non esitare: sono molto disponibile a sperimentare. Grazie,
Nice work, we liked your video very much so we embedded it on ChefCommons . com w/ link back and reference to Youtube. (Let us know if you don't wish for it to be featured)

You added tooo much flour on the dough. The dough should be very light and airy inside...

That is a lot of gluten.

@LordOmberus I am using 8% protein "Better For Bread" flour, haven't had good results with Caputo (10-12%) or Atlas ADM (14-15%)

If you are familiar with bakers formulas, this recipe will be very simple, you need an accurate scale:
flour 100%
water 80%
salt 2.7%
yeast 1.6%

Be sure an check out mynameisviince on youtube, he has a great video showing how not to handle dough so much and deflating it while doing so.

I think it's hard to do more complicated than that

The recipe was not clearly visible, it is:
907 gr flour (Harvest King better for bread machine non-bleached), 725 gr water 80F, 25 gr salt, 15 gr instant dry yeast
