I season my meat with chilli flakes, salt, pepper, and cinnamon. Potatoes I mashed with a strainer and add cream, garlic powder, salt, butter and pepper. I made it last night .. so yummy!

It'll obviously also depend on the % of alcohol and amount you use. I am teetotaler and a lab tech trying to find a good alternative to wine in my food :). Done numerous distillations in labs and it takes a while to separate the two
@nworb You really shouldn't worry about the traces of alcohol left in your food. Teetotaler or not. Not including the bake time it's reasonable to say this dish is reduced for about 15 minutes after the 7oz of red wine are added. 12% alcohol, you're talking about less than 2ml of alcohol per serving. You would get more of a buzz from rising with mouthwash than this dish.
@jum187 the alcohol- ethanol in the wine boils at 78 degrees centigrade, so the alcohol in the wine is gone by the time the dish is done....i'm no chef but that's my two cents :)

that looks classy! the shepard's pie I remember from growing up in the Caribbean was bland: layer of potato, layer of ground meat, then another layer of potato.
Never thought about putting eggs in the potatoes. I usually add a few breadcrumbs. I'll have to try that next time.
Also, what I do different, is I use beef stock instead of chicken stock, and add 2 tablespoons of a good dark mustard, and a good splash of balsamic vinegar.
Shepard's pie is great, because it's so simple that it's nearly impossible to mess up, and you can do it different each time. You can add all sorts of different vegetables, and all sorts of sauces, whatever you want.

Recipe: minced lamb (colour) season grate onion carrot garlic Worcester sauce tomato puree red wine thyme rosemary add chicken stock after lamb has sucked all the wine in. add chicken stock cook no more than 3~4 mins potatoes mash season egg yoks parmesan cheese put more on the top make holes with fork, 18~20 mins in oven. Somewhere around 190 if you are really unsure but cook it couple of times and adjust your temp. 1:44 Easy!

Shepherds pie recipe is a

However, it does point to the origin of the dish. Shepherds traditionally look after sheep, do they not? A cowherd looks after cows.

I like the way he grates the carrot and onion so finely, great idea, he's a horrible bullying arsehole but a great chef.

@steptoesaunt He's not a bullying arsehole. Watch Kitchen Nightmares, he squeezes the talents out of everyone he teaches and brings those businesses, well most of them, back to life. Don't mistake passion for bullying. But yes he's a damn good chef.

I've made this a few times, you don't need liquid in the potatoes, what you don't see him put in is butter. between the eggs and butter, it is moist enough

Odd that he doesn't put any liquid into the potatoes, like milk or stock. Wouldn't they be too stiff or dry this way, even with the eggs?
