1. V is pronounced like a W
2. C is always hard, like K or Kappa
But that's just classical pronunciation. I think the Vatican today uses a version more like modern Italian (like the CH sound for C and V sound for V).

@BloodofSpartans Love to have the benefit of your own knowledge, because I've also heard latin teachers (invariably anglo types) assert that the Romans pronounced the written V as a W. I have my suspicions about that, because so many of them are, as I mentioned, Anglo-Saxons, and also because the V sound corresponds to the V written in all the Romance languages, this sound can be heard consistently in cognates across them, and there is a paucity of the W sound in the Romance languages.

However, more importantly to Carmina Burana, the pronunciations had already shifted by the time these texts were written in the 12th century, which is why the singers pronounce the words as they do. As well, even spellings had changed somewhat and even the spelling errors committed by the original writer have been rendered unchanged.
