i have had this dish before in a different shape though , the red carrots were actually stuffed with the meat and rice , but the concept is the same , its a very tasty dish , we lack the red carrots here , and we have tried it once with normal carrots and to my surprise it was good .
@ghaddah, Yes, the original recipe is to stuff the carrots with the rice and meat, but i was not going to go through the trouble of doing that! i took the easy way and got the same flavors without the work. it works out with any color carrots , the tamarind is the main flavor in this dish. check out my blog for the full recipe please.
@mrfadi , i like the tangy/sour taste of the tamarind combined with the sweetness of carrots. in my opinion, the rice and meat stuffing is to die for! try it , you might like it.
I've never seen red carrots before, they look so pretty, love their color. I'm mexican and we use tamarind to make a cold beverage "agua de tamarindo" (delicious BTW) I never tought of using it in this way sounds really good and will definitely look for the ingredients to try this recipe, thanks for sharing it!
@crazyotakugirl , I have never seen them in the states before, but i have seen the red ones back in the Middle East. they are very pretty in color and are different color from the inside than the outside. they are very sweet in taste which makes their flavor come out delicious combined with the Tamarind. There are few recipes in Middle Eastern cooking where we add Tamarind molasses, this is one of them. If you like the taste in the drink you make you will love it cooked, try it & let me know.
@CaptainGratiot , the traditional recipe is made with Purple/reddish carrots, those come out during the fall in the Middle East, but i guess you can substitute by using any carrots of your choice. the dark ones are sweeter for the high sugar content in them but i am sure the flavors with any other carrots will be great too. Tamarind adds a lot of flavor to it too. check the recipe in full on my blog please.

Can I substitute with regular carrots, or is there a difference in flavor?
