thats nothing, sometimes a puff will round you up a bit and luff your sails, the bay is super gusty, or sometimes a newbie on the tiller will pinch up a lot... sure you can reef or just have a wild day lol

singlehanding a boat is not just a matter of size and make, but how it is rigged. remember, there are sailors that race singlehanded around the world on very large boats. But generally look for a boat this is in the range of 28-34 feet long if you are a novice, and one that has a roller furling jib, at least, and one with all the control lines led back to the cockpit.
I think the main is too full. They needed to pull hard on the vang, outhaul, and cunnningham to flatten the sail. As it is, as soon as he points away enough for the main to fill with wind, it heels way over. Maybe it's an old, blown-out sail.
I wouldn't call that struggling. Looks like normal sailing, but a bit overpowered. Sailboats tip (heel), although a reef would help, as would spilling off the main. Less heel would make for a more controlled and comfortable ride.
They sure are struggling because they are being repeatedly pulled to weather with sails luffing drastically which is not good for the sails or the riggling.
2 reefs in the main and a smaller jib to start. Might have to drop the mail since its a small boat.

Boat is 'pinching'. All he needs to do is bear off a couple degrees & the sail will fill nicely. Note the boat to the left in the distance.

reefing is reducing the amount of sail area to reduce the power that the wind is applying to the sails.
