The flatbreads are great with anything - cut them into strips and serve them with hummus or dips; serve them with a salad; use them as a foccacia-like base for thick, hearty sandwiches; or use them to sop up the sauce or juice from any dish. When they go stale, cube them and toss them with olive oil and a little seasoning, then toast them for amazing croutons.
I haven't made flatbread but I have made pizza I usually start with 2 cups water a quarter cup of olive oil a tablespoon of salt and a packet of yeast. mix all that with 2 -3 cups flour and beat in my KitchenAid mixer, adding more flour as it blends. you should end up using about 4-5 cups flour. when it's mixed it should be tacky to the touch and should pull away slightly with your finger but not stick to it completely when tapped. cover and let rise. simple and versatile. makes great buns.
I liked this video.. I alvvays thought flat bread didn't have yeast.... I vvas really excited for my mother vvho is allergic to yeast until I got to the part vvith the yeast... anyvvays.. I don't like pizza!
