Wow!!! That looks so good! You know what? Instead of pimientos, how about a spoonful of pickled ginger? It's red, and would give you a little bit of heat (If you like spice in your curry).I get my pickled ginger right at the grocery, not a specialty store. I am definitely going to make this dish.
What do you think of onions? White, Spanish, etc. ?
