The reason the balloon shrinks, is because cold air is more dense therefore taking up less volume, and when he puts it on the table again, the air inside the balloon heats up again and therefore expanding!:)

but I'd like to know why the balloon doesn't pop is it because the air inside the balloon hasn't fully expanded or did the properties of the rubber change because of the cold temperatures? :o

There could be major applications behind this, am thinking maybe storage, image a suitcase that you could just pull thing out of and they would auto inflate, such as temporary furniture, the balloon looked hard to burst which could also be a plus.

Man, I saw a demonstration like this at the Green Bank Observatory in West Virginia and it was awesome! I dont know if anyone has said yet, but the reason it does that is because the liquid nitrogen is so cold, it actually makes the oxygen molecules bounce around very slowly and decreases pressure. Water freezes at 0 degrees C and if I'm not mistaken, liquid nitrogen is almost -200 degrees C. That is freakin' cold!
