whoa, that's some grill. I have to try this recipe though, usually I make my tofu like nuggets. I'd season them, mix flour and water, season that, then have a bowl of bread crumbs. Mix tofu with, flour/water mix, then drop in bread crumbs, then fry. It's amazing, you can even double batter it.

Allow me to suggest foregoing the casserole dish for marinating and instead using a freezer bag that locks. It helps marinate all of the tofu, takes up less space and fits more easily in any area of the fridge (the door for example).

You are likely squeezing it too hard. I recommend putting the block of tofu in a clean dish towel and then pressing gently to help express some of the water. Similarly you can use the same technique and put a book on top of it for a while. Just don't let it squish too long or it willl crumble. You dont want to "dry" the tofu out, it will still be moist, but not as WET. Another idea is to freeze the tofu and then unthaw it before use, that will give it a more chewy texture and less moisture.

@WEwalked I always freeze the firm tofu because it changes the texture of it. Defrost, then cook. It's one of those things that ppl. don't mention.
When the tofu freezes, it makes cracks in it and when it's defrosted, it can be squeezed like a sponge!:)

a suggestion... try freezing the tofu and thaw it to create pockets in the tofu....and add kosher gelatin to the marinate....
that way the tofu will hold more marinate and the gelatin will improve texture

I just made this on the grill and it was pretty good! I used wheat flower and it was still crispy.
1) Don't turn it too soon or you might lose some of the coating.
2) Only make half the coating mixture if you're only going to use one block of tofu.
