hi. the video is amazing!! i have a few questions-
it seems like the dough itself(before folding with the butter) doesn't contain butter or oil, is it really like that, or you put some butter in when making the dough in the first step.
another question- is the recipe accurate? how much butter is for 1 kg of dough?
@sagit532 Hi there! Some people put a little butter, or eggs or milk in the dough, but I rather keep it simple. so just flour water salt sugar yeast.
it's 25% butter so 250g for 1kg dough. but you can put up to 35% if you like your croissant more flaky, if you can afford it, and if your heart can take it ;)
That must be a pain in the ass to roll out by hand. When I try making croissants, I invariably have to increase hydration because the dough becomes so hard to roll out. Damn I wish I had a sheeter.
Dude you are the sh@t!!! I was an artisan bread baker for 12 years and it is rare to see someone bang-it-out like you did. Thank you for the awesome vid =)
@H0bbyman ...don't remember the last time I sat down and treated myself to a bag of flour or packet of sugar and wondered where it came from - the argument is directed towards baked goods being made by hand or by machine, not the origin of the ingredients used.
You've obviously never had a real pastry before, or probably anything homemade. Also they're not burnt, they've received an egg-wash, so that they brown better, and become crispier on the outside.
It's people like you who are destroying the food industry with ignorance and laziness.
@HalfaLimeProductions so, you think there burnt as well? hahaha!! relax and take a chill pill! i'm entitled to my opinion and i wouldn't eat any of the pastry that's on show
Your ways of doing it are weird and takes too long. If i took half the time you take i was done, cause i have to make over 2000 of those a day. Just a lil note, the sides are too thin and they will get dry when you cook them, besides that you have a great video showing the steps ;)
o la la! man you are awsome. i just cant stop smiling for the second day! keep goin! wish all fo my two bakers could do the same with such a smile. you rock , mate!
it is awesome ,thank you very much for this beautiful video ,I just have a question, did you put the dough to the fridge every time you fold it with butter?because in many other videos which I wached I saw they put the dough in fridge for 1 or 2 hours when they fold it with butter
Frozen croissants or those with preservatives are nowhere near as appealing as croissants that are fresh and handmade... Go live in your soul-less machine-driven world while the rest of us enjoy life as it should be!

inefficient waste of time. Can be made by a machine and robot cheaper and in higher quantify. With the right preservatives, they can be shipped across the country. Anything that can't be made in that way should be phased out of our menus, like they already have been. People like this who cling to stone age economics are holding back bigger business and greater profits which will benefit all.
