  • hi. the video is amazing!! i have a few questions-

    it seems like the dough itself(before folding with the butter) doesn't contain butter or oil, is it really like that, or you put some butter in when making the dough in the first step.

    another question- is the recipe accurate? how much butter is for 1 kg of dough?

  • @sagit532 Hi there! Some people put a little butter, or eggs or milk in the dough, but I rather keep it simple. so just flour water salt sugar yeast.

    it's 25% butter so 250g for 1kg dough. but you can put up to 35% if you like your croissant more flaky, if you can afford it, and if your heart can take it ;)

  • That must be a pain in the ass to roll out by hand. When I try making croissants, I invariably have to increase hydration because the dough becomes so hard to roll out. Damn I wish I had a sheeter.

  • @H0bbyman ...don't remember the last time I sat down and treated myself to a bag of flour or packet of sugar and wondered where it came from - the argument is directed towards baked goods being made by hand or by machine, not the origin of the ingredients used.

    You've obviously never had a real pastry before, or probably anything homemade. Also they're not burnt, they've received an egg-wash, so that they brown better, and become crispier on the outside.

    It's people like you who are destroying the food industry with ignorance and laziness.

  • Your ways of doing it are weird and takes too long. If i took half the time you take i was done, cause i have to make over 2000 of those a day. Just a lil note, the sides are too thin and they will get dry when you cook them, besides that you have a great video showing the steps ;)

  • Great video, this reall shows a bakers work! But I don't get why people are so amazed. I'm not saying this is bad it looks delicious. But this is what any baker does every day he works. This is not Jimi Hendrix of baking.
