Oh my God, this doctor has used, an awful understatement. Its not just an inability to absorb gluten and proteins. This is certainly one of the results, but not the main issue. Celiac disease is an autoimmunologic disease, meaning the body destroys its own tissue, because it attacks gluten as it would a virus, and gluten in the bowel leads to damage in the bowel and in other parts of the body.

@satrapy27 My doctor has treated celiac disease with success. You are absolutely correct...the body systems get confused and begin to process foods incorrectly. I am currently treating Fibromyalgia (due to prolonged antibiotic use) because my body systems have gotten "confused" and my body has started to attack itself.
