Egyptian looks varied by region. In the north Egyptians tended to be lighter/mediteranian looking. As you go futher south they were darker. Southern Egyptians mixed more with Nubians.

Temperatures average 70°f so they would still have had more than just olive skin. Even some arabs can look very dark.
