You can just tell that the Opening Theme is gonna be replaced with something composed by the American team, with no lyrics, because we don't speak Japanese.

That's not exactly true. This theme is in the japanese version of the game as well.

The theme playing during the video is a remix. And I bet the first piece of music is the opening video.
They kept Roll's theme in Marvel vs Capcom where is had the Japanese singing.
