Are the backups incremental and/or differential... I really don't know the difference... But can I go to a previous version of a file after it has backed up a newer version?

Yes they are, every snapshot keeps "changes" of files. :)

Differential. Back In Time ties together rsync, diff, and cp to make a backup utility.
