You did a wonderful job with this video, you're safety tips were very informative! I'm cooking a Julia Child's recipe that requires me to flambe the chicken and I feel very confident about doing it now :) Thank you!
1. The higher the alcohol content, the larger the flame. Use Caution
2. Use 40 proof or higher, otherwise it will not catch fire.
3. This is more subjective, but should still be factored in. The flavor profile that the alcohol creates. Depending on the type of alcohol you use, the flavor will be affected accordingly.
4. The proof determines how much water is in it. This will affect the product by needing more burn-off time. Take care to not overcook.

less alchohol ~50% more heat, more alchohol ~75% less heat needed, atleast I think for now, cause my absenth went too high and flaming was too short
